This 99.9% Caffeine free coffee, sourced from Colombia, is decaffeinated using liquid carbon dioxide. The green beans are soaked in this pressurized and cooled liquid, where the caffeine molecule binds with the CO². The green coffee is soaked in containers of liquid carbon dioxide until the caffeine is "soaked out". The carbohydrates and proteins are not affected in this method and the bean retains its flavour components.
